Sometimes I get a little over ambitious, and buy a ton of produce, while telling myself that I’m going to be great this week and juice every single day! When I really just end up playing myself because I’ll juice for a few days, get lazy, and before I know it I’m having to toss out a ton of produce because I let it go bad. Well not this time!
This year I’m Daniel Fasting with a friend, and the best part of fasting with friends is having an accountability partner to share experiences and recipes with. After seeing a pic of my homegirl's homemade soup, I was inspired to make my own. Especially since I already had plenty of produce left over from my juice cleanse.
I happen to be apart of the 5% of people who don't own an Instant Pot, but my trusty crockpot never fails me. Here are the appliances I use and love!
This was my type of meal: quick, super nutritious, and very adorable!
As you can see, I simply chopped up my veggies and tossed it all in my crockpot to cook! I cut my carrots and potatoes by hand, but used my food processor for the celery and onions.
I worked with what I already had here at home, but feel free to come up with your own veggie compilation and let me know how it turns out!
